Milk, dahi, desi cow ghee, buffalo ghee and chach. The milk comes as buffalo or cow - tell us which you want. Paneer, table butter and shrikhand are on the way, but we will not take orders for them until we are making them.

Buffalo milk is thicker and richer, which is why it is the usual choice for chai, kheer and anything that needs body. Cow milk is lighter and a little sweeter, and it is more often the one children drink plain. Plenty of houses take some of each.

Boil it once when it reaches you and keep it refrigerated, and use it within a day. There is nothing added to make it keep longer than milk should.

Both go in the fridge, covered. Dahi will keep two or three days and gets sourer as it goes - day-three dahi is better in kadhi than in raita. Chach is best drunk the same day.

No. A cool, dry shelf is enough. Use a dry spoon every time - water is the one thing that will spoil it.
