Ghee made from the milk of our cows alone, kept apart from the buffalo ghee so you know exactly which one you have. Cow ghee is the lighter of the two - it is the one most families here keep for everyday tadka, for rotis straight off the tawa, and for children. You can tell ghee that has been made slowly by the smell when it hits a hot pan, and by the grain that settles in the jar as it cools.

How we make it

Made on the farm from our own cows' milk, in small batches, and filled into glass jars. We are not going to dress this up with a method name we cannot stand behind - if you want to know exactly how it is made, ask us, or come and look.

Keeping it

A cool, dry shelf is enough - ghee does not need a fridge. Use a dry spoon every time; water is the one thing that will spoil it.

Questions about our desi cow ghee

What is the difference between your cow ghee and buffalo ghee?
Each is made only from that animal's milk. Cow ghee is the lighter of the two and is what most houses use every day; buffalo ghee is richer and heavier, and is often kept for sweets. Plenty of kitchens keep a jar of each.
Does ghee need to be refrigerated?
No. A cool, dry shelf is enough - ghee is almost pure fat, which is why it keeps without a fridge when butter does not. Use a dry spoon every time; water is the one thing that will spoil it.
What are the grains at the bottom of the jar?
That is how ghee crystallises as it cools, and a visible grain rather than a uniform paste is a real physical difference you can check yourself. We have written about what each step of the process does if you want the longer answer.
