We keep both buffalo and cow milk. Buffalo milk is the thicker of the two - it is what most families here reach for when the chai has to hold its colour or the kheer has to thicken. Cow milk is lighter and a little sweeter, and it is usually the one children drink plain. Tell us which you want and we will bring it; plenty of households take some of each.

The animals are milked on the farm and the milk goes out on the same round it was collected on, in a glass bottle rather than a plastic pouch. It is not bought in from a collection centre, it is not reconstituted from powder, and it does not sit overnight waiting for a delivery slot. Leave yesterday's empty bottle out and it goes back with us on the next round.
Boil it once when it reaches you, then keep it refrigerated. There is nothing in it to make it keep longer than milk should, so use it within a day.
