Chach churned from our own dahi. In a Jalore summer this is not a beverage so much as a necessity: it is what gets drunk at noon when nothing else will do, and what gets sent out to anyone working in the heat. Light, sour, cold, and gone by the afternoon in most houses.

How we make it
Churned from the dahi we set that morning, thinned with water, bottled and sent out the same day. It is made in the quantity we expect to sell, because chach that has been sitting around is not worth drinking.
Keeping it
Keep it cold and drink it the same day. Chach does not improve with keeping.

Questions about our buttermilk
- What is the difference between chach and lassi?
- Chach is thinner and sour - dahi churned and let down with water, usually salted. Lassi is thicker and normally sweetened. In a Jalore summer chach is the one people drink through the day.
- How long does it keep?
- Drink it the same day. Chach sours quickly and, unlike dahi, it does not become useful as it goes - sour dahi has a job in kadhi, sour chach has none.
- Is it salted or plain?
- Tell us how you take it when you order and we will let you know what we can do. Every house here has its own idea of the right seasoning and they are all quietly convinced theirs is correct.
